• Add a small amount of vegetable oil to the griddle pan after it has heated for two minutes. Adding oil is not necessary with non-stick griddle pans but it will help foods cook faster and release easier. 
• Lower the raw foods onto the griddle surface slowly to avoid splattering the hot oil. 
• Flip the food with wooden or other non-abrasive spatula can reduce the heat to medium high to complete the cooking.
